Rượu Đế Viet

Our Rượu Đế Viet begins with sustainably grown jasmine rice from Next Generation Foods, in West Sacramento. Jasmine is the traditional rice for making rượu đế and California is known for high-quality rice that is exported to Asia. We use a hybrid fermentation, combining a Western amylase with a traditional Vietnamese culture. All of our spirits convey the best characters of the quality rice from which they are made.

The most traditional of our rượu đếs is distilled with the column of the hybrid pot still bypassed, in the style of a rudimentary pot still. The spirit vapor goes straight from the pot to the condenser and the run goes deep into higher alcohols. This congener rich style delivers the funky flavors that experienced rượu đế drinkers expect.
With aromas of toasted, puffed rice, sesame oil, sour plum, and milkweed, Rượu Đế Viet Original explodes with umami on the palate. Complex flavors of mushroom, black tea, and soy, expand and give way to a long lingering finish of black pepper and white wine.

We engage the columns on our hybrid pot still for a cleaner, brighter spirit that focuses tightly on the comforting flavors of cooked rice and the koji culture. Rượu Đế Viet Premium is distilled to bottling proof, with the strength being adjusted only slightly to keep the government happy.
It has a clean, light, citrus and conifer nose, with white pepper that dovetails into a beautiful flavors of a rice-wine eau de vie; slightly doughy but with gentle impressions of sautéd vegetables. The soft entry grows in viscosity leaving a lingering, pleasant finish.

Reserve

Our cleanest expression, Rượu Đế Viet Reserve, is so delicate tasting you won't realize how strong it is 'til you get try to get up from the table. We engage the rectification columns to create the strongest, cleanest expression of our spirit.
This elegant spirit possesses a very soft, very clean, nose that hints at rice wine, ocean spray, stewed corn, roasted peanuts, lichen and dry forests. In the mouth, tropical impressions of tangy pineapple and green vegetables are balanced with umami notes of mushrooms, soy broth, and chicken with rice: with delicately complex and delightful finish.

Rượu Đế Cali

Rượu Đế Cali is our tribute to our home, California. The spirit begins with sustainably grown, organic Calrose rice from Next Generation Foods, in West Sacramento. We ferment this in a Western style, using amylase to convert the rice starches into sugar, which is fermented in a wine yeast from San Diego. The spirit is rectified in the columns our hybrid pot still coming out very clean but always carrying the beautiful character of cooked rice.

With aromas of Tutti Fruiti, honeysuckle, lemongrass, and orange tarts,
pleasant, soft, round, clean but with a viscous, creamy mouthfeel and with flavors of Calrose rice and and a finish that lingers in soft complexity.

The delicate lemony nose is crisp ywith hints of a walk through the California trails of fresh cedar, spring oxalis, mushrooms, and wet leaves lining the forest floor. The soft entry expands on the palate with impressions of apple cellar, citrus zest and pith, salt, wine, and doughy steamed rice. It finishes with the a soft lingering flavors of lemon-cream custard.

Rượu Đế Whiskey

Rượu Đế Whiskey is rested for a few months in ex-whiskey barrels, letting the rượu đế character shine through, supported by the vanillin and sweet notes of the wood.
Dáo's experimental journey into rice whiskey is a straw-colored spirit with a softer oak presence than classic whiskies. Each batch is a single-barrel leaving unique impressions in the nose and on the palate.

With mild floral and lemon aromas, the bright, clean nose hints at puffed rice, cream and tangelo zest. With a soft entry, this whiskey expands on the palate coating the mouth with viscous flavors of vanilla, tropical fruit, pencil shavings and campfire. It is robust but not aggressive. Wood tannins and a delicate white pepper dusting come out in its warming finish
